Five ways to eat your avocado

Avocados are among the healthiest plant-based foods out there. Packed with vitamins, fiber and heart healthy monounsaturated fats, as well as more potassium than a banana, this pear-shaped fruit delivers more than just great taste. Sweet, savory or salty, these versatile fruits can be made to fit any order. It can be eaten as a meal on its own, a tasty addition to your salad, chicken or taco or as a dessert!

OK, OK, we know what you’re thinking: duh. Everyone’s heard of avocado toast.

But have you wandered down the endless road of avocado possibilities?

Here’s a few other great ways to eat that avo…

Avocadonaise

Introduce your favorite deli sandwich to the newest condiment…avocadonaise! Not to be confused with avocado mayonnaise, this spread is going to add a mouth-watering surprise to your sandwich. Skip the mayonnaise and mustard and instead take an avocado, whip it until it’s smooth, season it with some salt and pepper, and, if you’re feeling really adventurous, some garlic powder. Spread a generous amount on your bread and enjoy your newly-minted deli sandwich. You can also use this recipe as the base for your favorite chicken or tuna salad recipe!

Egg-stuffed avocado

If you’re looking for an easy go-to breakfast that carries a one-two punch that will hold you over until lunch, then the egg stuffed avocado is for you! Slice your avocado down the center and remove the pit along with 1-2 tablespoons of the flesh (or so there is enough room for an egg to fit). Crack one egg over the divot, trying to let the yolk fall first, and then allowing the egg white to fill in around the yolk. Pop the avocado in your oven for 15-20 minutes at 425, or until the egg white is cooked. Sprinkle with salt and pepper, or any other favorite garnishes, and enjoy!

Smoothies

Breakfast smoothies are a busy girl’s morning must-have. But do you find that some smoothie recipes don’t keep you full until lunch? We have an easy fix: avocado, of course! Any type of smoothie – from protein, to fruit, to greens – can use an avocado boost. It’s simple: use a ripe avocado, peel, remove the pit and add to your Vitamix along with your other tasty smoothie ingredients. Don’t worry, the avocado won’t change the taste of your smoothie – but it will add some healthy fats and keep you full longer.

Avocado pudding

This rich dessert is sure to fulfill any sweet tooth craving…and it’s incredibly easy! Simply mix 2 large avocados (you’ll need to whip them until they’re smooth), ½ cup of milk, ½ cup of brown sugar, ½ cup of cocoa powder and 1 teaspoon of vanilla. Once it’s all mixed, let it chill in the fridge for an hour, and VOILA! Dessert is ready and guilt free!

Avocaprese salad

Ever wondered what you would get if you substitute the mozzarella in a Caprese salad for slices of ripe avocado? Mouthwatering deliciousness is exactly what you will get! Slice the avocados into thin, round pieces that fit perfectly on your tomatoes. Place your fresh basil leaves atop the avocado and don’t forget to drizzle your favorite balsamic vinegar over top. Voila! You have an innovative, flavorful snack that’s pretty enough to fill in as your leading hors d’oeuvres!

Now that you have these avocado pleasers in your back pocket, you can transform any ordinary dish or dessert into a healthy, flavorful avo masterpiece!
